Bologna and Creamed Mushrooms Tarts

Chicken Bologna

List of ingredients

  • 1 package (255 g) containing 12, 7.5 cm (3 in.), tart crusts
  • 250 g bologna, cut in 1 cm cubes
  • 150 g mushrooms, diced
  • 3 shallots, minced
  • 8 ml (½ tbsp.) olive oil
  • 125 ml (½ cup) 35% cream
  • 5 ml (1 tsp.) old-fashioned mustard
  • 1 tbsp. rosemary, minced
  • Freshly ground pepper, to taste

Preparation

  1. Preheat oven to 190°C/375°F.
  2. Place tart crusts on baking sheet and cook until golden.
  3. Set aside, keeping warm.
  4. Prepare topping while tart crusts are cooking.
  5. Preheat olive oil in skillet, on high heat. Add mushrooms and sauté for two minutes.
  6. Add bologna cubes and minced shallot, and cook for three minutes.
  7. Add 35% cream and rosemary, and pepper to taste.
  8. Simmer for three minutes, stirring.
  9. Add mustard and check seasoning.
  10. Distribute garnishing on cooked tart crusts.

  • Sprinkle grated cheese on garnished tarts and oven-broil in until cheese is browned.
