Chicken breasts with shallots and Balsamic Vinegar

List of ingredients

  • 4 plain boneless, skinless chicken breasts
  • 30 ml (2 tablespoons) oil
  • 30 ml (2 tablespoons) butter
  • 4 French shallots, chopped
  • 125 ml (1/2 cup) balsamic vinegar
  • 10 ml (2 teaspoons) corn syrup or maple syrup
  • Salt and ground black pepper to taste

Preparation

  1. Preheat the oven to 375°F (190°C).
  2. In a large saucepan, heat the oil and melt the butter over medium-high heat. Brown the chicken breasts, turn them only once. Salt and pepper generously.
  3. Place the chicken in an ovenproof dish and continue cooking for 20 minutes.
  4. In the frying pan, brown the shallots.
  5. Deglaze the frying pan with the vinegar and reduce by half. Add the syrup.
  6. Place the chicken breasts on each plate and share the juices between them.

Serve immediately.
