4 Flamingo chicken burgers
80ml (1/3 cup) mayonnaise
30ml (2 tablespoons) homemade or store-bought basil pesto
12 slices of a bread of your choice
12 slices of Olymel bacon, cooked
4 lettuce leaves
2 tomatoes, sliced
Salt and ground black pepper to taste
Preparation
Cook the chicken burgers according to package instructions.
Meanwhile, mix the mayonnaise and the pesto.
Toast the slices of bread.
On a work surface, place 4 toasts, spread with the pesto mayonnaise, garnish with the hot chicken burgers and bacon.
Cover with 4 more toasts, garnish with lettuce and tomatoes.Season to taste.
Complete with the last 4 toasts, mayonnaise and pesto spread on the inside.
Hold together with toothpicks and cut into slices.
Serve with coleslaw and carrot salad.
Tip
from the chef
To save time, replace the chicken burgers with chicken Krispy Toast cooked in toaster.
