Grilled Chicken Breasts with Tomato and Caper Salsa à l’Orange

A delicious idea ready in less than 20 minutes!

List of ingredients

  • 4 plain boneless, skinless chicken breasts
  • 15ml (1 tablespoon) olive oil
  • 80ml (1/3 cup) red onion, chopped
  • 30ml (2 tablespoons) olive oil
  • 1 large tomato seeded, diced (or 2 Italian tomatoes)
  • 125ml (1/2 cup) black olives, chopped
  • 45ml (3 tablespoons) capers, drained
  • 7ml (1 1/2 teaspoons) orange zest, finely chopped
  • 30 – 45ml (2 - 3 tablespoons) orange juice
  • Ground black pepper to taste

Preparation

  1. Brush the chicken breasts with olive oil ((15 or 30 ml)and season.
  2. Preheat the barbecue or a grill-type frying pan over medium to high heat and cook the chicken breasts, turning once. Cook for approximately 8-10 minutes on each side, according to thickness.
  3. Meanwhile, in a saucepan, cook the onion in the oil (15 or 30 ml)over medium heat for 2 minutes.
  4. Add the remaining vegetables and the orange juice and zest. Pepper to taste. Reserve covered.

 

Serve the grilled chicken with the sauce, a side of rice and a green salad.
