12 Flamingo breaded chicken strips
30 ml (2 tablespoons) of butter or olive oil
1 small chopped yellow onion
2 chopped cloves of garlic
1 x 300 g package of chopped frozen spinach chopped, thawed or 1 package of fresh spinach
125 ml (1/2 cup) 35 % cooking cream
1/2 nutmeg, freshly grated
Salt and ground black pepper to taste
375 ml (1 ½ cup) tomato sauce
8 large basil leaves freshly chopped or 1 tablespoon of dried basil
Mixed 200 g grated mozzarella cheese with 150 g grated parmesan cheese
Preparation
Preheat the oven to 375°F (190°C).
In a non-stick frying pan, heat the butter over medium heat. Add the onion and garlic, brown until onions are translucent.
Add the spinach, cook for 5 minutes while stirring. Sprinkle the nutmeg, salt and black pepper.
Add the cooking cream, reduce to half and then remove from heat.
Spread the spinach in a baking dish, add the chicken strips, the tomato sauce, and basil, top off with cheese mix.
Cook for 30 to 40 minutes until cheese is melted and golden.
