Romano-Crusted Chicken with Almonds and Old Style Mustard

List of ingredients

  • 4 plain boneless, skinless chicken breasts
  • 125 ml (½ cup) grated Romano cheese
  • 125 ml (½ cup) ground almonds
  • 250 ml (1 cup) bread crumbs
  • 30 ml (2 tablespoons) fresh oregano, chopped
  • 1 French shallot, thinly chopped
  • 125 ml (1/2 cup) melted butter
  • 30 ml (2 tablespoons) Old style mustard
  • Vegetable oil

 

Preparation

  1. Preheat the oven to 350°F (180°C).
  2. In a bowl, mix the Romano cheese, almonds, bread crumbs, oregano and shallot.
  3. With a fork, blend the melted butter and old style mustard, then add it to the cheese and almonds mixture.
  4. Spread this preparation equally onto the chicken breasts and press down so that it forms a crust over them.
  5. Place the breasts in a lightly oiled baking dish. Cook in the oven for 25 minutes or until the chicken flesh temperature reaches 170°F (78°C).
