Spring Rolls with Chicken Chunkies

8 Flamingo honey & garlic chicken Chunkies
4 rice papers
4 leaves of Boston lettuce
125 ml (1/2 cup) carrot, cut into julienne
125 ml (1/2 cup) cucumber, cut into julienne
15 ml (1 tablespoon) marinated ginger, strained
30 ml (2 tablespoons) fresh cilantro
8 fresh mint leaves
4 quarters of lime
Preparation
Cook Honey & Garlic chicken Chunkies as indicated on package.
In the middle of moist rice paper, put a lettuce leaf, a little julienned carrots and cucumbers, and then a few leaves of fresh cilantro and mint.
Cut the cooled yet still warm chicken Chunkies and add to rice paper. Finish off with ginger.
Roll delicately the rice paper by closing up the ends as your rolling towards the centre.
Serve with the lime quarters.
Tip
from the chef
For a good-looking presentation, cut the spring rolls in half diagonally and plate them one on top of the other in a nice white platter.
