Turkey and Avocado Quesadillas
As a lunch, appetizer or main course, these quesadillas will please the entire family!
List of ingredients
- 1 x 125 g Shaved Oven Roasted Turkey Sliced
- 8 tortillas
- 500 ml (2 cups) grated mozzarella cheese
- 1 clove of garlic, chopped
- 80 ml (1/3 cup) red onion, minced
- 2 small ripe avocados diced
- 125 ml (1/2 cup) red bell pepper diced
- 30 ml (2 tablespoons) lemon juice
- 10 ml (2 teaspoons) chilli powder
- 30 ml (2 tablespoons) fresh cilantro, chopped
- Ground black pepper to taste
Preparation
- In a large bowl, mix all the ingredients for the garnish including the cheese. Add the spices andstir well through the mixture.
- Garnish the surface of 4 tortillas by dividing the mixture equally and cover with the other 4 tortillas.
- Heat a non-stick pan over medium to high heat or preheat the BBQ and cook the tortillas until the cheese has melted and the tortillas are crisp and golden.
- Serve with salsa and sour cream.
