What is air-chilled poultry?


Carcasses are chilled in a refrigeration unit rather than in water, preventing water retention. Then, air-chilled poultry contains less moisture than water-cooled poultry; therefore, it shrinks less during cooking. Some people think it tastes better.

What does poultry eat?

Poultry feed is made up largely (88%) of grains and cereal by-products. In this sense, all chickens are "grain-fed." Vitamins and minerals are added to compensate for nutritional deficiencies.

Are chickens fed hormones?

Poultry products do not contain hormones. The administration of hormones to chickens has been forbidden in Canada since the 1960s.

Which came first…?

An egg takes 21 days to hatch. The same day as a chick hatches, it is sent from the hatchery to the farm.

Sensitive to their environment, chickens are raised in a clean and well-ventilated chicken house, where the temperature and humidity are controlled. There, they can drink, eat and move around to their liking; on a floor covered with straw or soft dry wood shavings.

What's the difference between a roaster, a broiler chicken and a Cornish hen?

A roaster weighs about 3 kilos.

A broiler chicken weighs between 1.7 and 2.5 kilos.

A Cornish hen is smaller and younger; it is mature in 28 days and weighs at most slightly more than a kilo
