List of ingredients

  • 1 package (680 g) Flamingo chicken strips
  • 8 large tortilla
  • 45 ml (3 tbsp.) olive oil
  • 400 g Monterey Jack or cheddar cheese, grated
  • 225 ml salsa
  • 1 green bell pepper, cut in strips
  • 1 red bell pepper, cut in strips
  • 1 onion, minced
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 4 tbsp. coriander, finely chopped
  • Freshly ground salt and pepper, to taste
  • 225 ml sour cream

Preparation

  1. Cook chicken strips according to instructions on packaging.
  2. Heat up half the olive oil in frying pan, add onion and pepper and cook while stirring for four to five minutes. Add cumin and chili powder, and salt and pepper to taste. Set aside.
  3. Top half of the tortilla with salsa, cheese and sautéed onion and pepper. Sprinkle coriander and add two chicken strips on each tortilla.
  4. Fold tortilla over toppings, pressing firmly. Brush with remaining olive oil.
  5. Grill in pan or on barbecue over medium heat until cheese is melted.
  6. Cut in three triangles and serve immediately with sour cream.

  • Serve with mesclun salad and Mexican rice for a complete meal.
