Plain Chicken Chunkies

List of ingredients

  • 1 package (600 g) of your favourite Flamingo Chicken Chunkies
  • 4 precooked pizza crusts
  • 125 ml salsa
  • 125 ml store-bought pizza sauce
  • 200 g Monterey Jack or cheddar cheese, grated
  • 200 g mozzarella cheese, grated
  • ½ green bell pepper, cut in fine strips
  • ½ red bell pepper, cut in fine strips
  • 8 large mushrooms, minced
  • 15 ml (1 tbsp.) olive oil
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • Freshly ground salt and pepper, to taste
  • 200 ml sour cream (if desired)
  • 2 tbsp. fresh coriander, chopped


  1. Preheat oven to 375°F (190°C).
  2. In frying pan, heat up olive oil, add mushrooms and cook while stirring for two minutes. Add cumin and chili powder, and salt and pepper to taste. Set aside.
  3. Combine pizza sauce and salsa and spread evenly over pizza crusts.
  4. Add mushrooms and Monterey Jack or cheddar cheese.
  5. Add bell pepper and chicken chunkies, ending with mozzarella.
  6. Cook in oven until cheese is nicely browned.
  7. Take out of oven, sprinkle with minced coriander and add sour cream at centre of pizza.

  • Replace pizza crusts with whole wheat pita breads for a healthier version of the recipe.
