List of ingredients

  • 4 Flamingo chicken Burgers
  • 15 ml (1 tablespoon) olive oil
  • 1 clove of garlic, chopped
  • 60 ml (1/4 cup) red onion, chopped
  • 60 ml (1/4 cup) green pepper, diced
  • 125 ml (1/2 cup) kernel corn
  • 1 tomato, seeded and diced
  • 2 ml (1/2 teaspoon) sugar
  • Hot pepper sauce to taste
  • Salt and ground black pepper to taste
  • 30 ml (2 tablespoons) fresh cilantro, chopped
  • 4 cornbread or onion buns
  • 4 lettuce leaves

Preparation

  1. Cook the chicken burgers according to package instructions.
  2. Meanwhile, heat the oil over medium heat and brown the garlic and onion.Add the pepper and corn and cook for 2 minutes.
  3. Mix in the tomato, sugar and pepper sauce. Season and cook for 2 minutes.
  4. Remove from heat and sprinkle with fresh cilantro. Set aside.
  5. Heat the buns, garnish with the hot chicken burgers, lettuce and salsa.
  6. Serve with corn chips and guacamole.

  • This salsa is as delicious served cold. Mix all the ingredients in a bowl and serve on hot burgers.
