Mini Brochettes with Chicken Chunkies and Grilled Bell Peppers

A finger licking good tapas ready in no time!

Plain Chicken Chunkies

List of ingredients

  • 1 x 600 g package of Plain chicken Chunkies
  • 1 red bell pepper diced in 2 cm (1 in) pieces
  • 1 green bell pepper diced in 2 cm (1 in) pieces
  • 1 yellow bell pepper diced in 2 cm (1 in) pieces
  • 45 ml (3 tablespoons) olive oil
  • Salt and ground black pepper to taste

Preparation

  1. Cook the chicken Chunkies as indicated on package.
  2. On a baking sheet, spread the bell peppers on parchment paper and brush with olive oil. Salt and pepper to taste.
  3. Cook in the oven at 450ºF (230 ºC) until bell pepper are golden brown.
  4. Using a toothpick or small brochette skewer, assemble one piece of chicken Chunkies with bell pepper pieces of each colour. Enjoy immediately.

Tip
from the chef

  • Serve with a spicy mayonnaise: add 5 ml (1 teaspoon) of paprika to 125 ml (1/2 cup) of mayonnaise. Mix well together.
