Spinach and Fruit Salad with XOXO Chicken Nuggets

Crunchy Chicken Nuggets XOXO

List of ingredients

1 box Flamingo crunchy XOXO chicken nuggets

8 cups baby spinach

24 strawberries, sliced

1 cup blueberries

½ cup almonds, flaked and grilled

 

Dressing

  • ¼ cup olive oil
  • 2 shallots, finely diced
  • 1 tbsp. old-fashioned mustard
  • 2 tbsp. honey
  • 2 tbsp. balsamic or wine vinegar
  • Freshly ground salt and pepper, to taste

Preparation

Dressing

  1. Mix all ingredients in a bowl and whisk thoroughly; check seasonings and set aside in a cool place.

Salad

  1. Preheat oven and cook nuggets as specified on packaging.
  2. Distribute spinach in flared bowls.
  3. Drizzle dressing over spinach and distribute strawberries, blueberries and almonds in bowls.
  4. Serve salad as side dish with nuggets.
