In addition to being a good source of protein, iron and vitamins, chicken is leaner than most other meats: only 2.1 g of fat per 100 g of chicken breast compared to 13.9 g for the same quantity of lean ground beef!

Did you know that two-thirds of the fat in chicken is found in the skin? Eliminating this from your diet leaves you with a light, healthy and delicious meal.

For wiser cooking, use a roasting pan with a grill to prevent the chicken from soaking in its own juices.

To make it more tender and juicy, simmer your chicken in a small amount of water or broth. This way, the meat will contain very little fat. As well, make sure you get rid of most of the cooking liquid and replace it with a low-fat sauce.
