Three Cheese Bologna in Puff Pastry

As entrees or appetizers, these puff pastries contain a variety of luscious flavors!

List of ingredients

  • 1 package puff pastry
  • All purpose flour
  • 350 g bologna, cut in 1 cm cubes
  • 1 onion, diced
  • 8 ml (½ tbsp.) olive oil
  • 100 g gruyere cheese, grated
  • 100 g cheddar cheese, grated
  • 100 g mozzarella cheese, grated
  • 1 egg, beaten with 15 ml (1 tbsp.) milk
  • Ground nutmeg, to taste
  • Freshly ground pepper, to taste


  1. Preheat oven to 190°C/375°F.
  2. Roll puff pastry on floured surface.
  3. Cut pastry in six equal portions.
  4. Preheat olive oil in frying pan on high heat, add onion and sauté for two minutes.
  5. Add bologna cubes and cook for three minutes, season with nutmeg and pepper to taste. Remove from heat and set aside to cool.
  6. When mix is cooled, add cheese.
  7. Brush each piece of pastry with egg mixture.
  8. Place on centre of pastry pieces 1/6 of bologna and cheese filling, making sure to leave enough free space on edges to fold pastry.
  9. Fold pastry to form a turnover and firmly press edges together with a fork.
  10. Place turnovers on a baking sheet covered with parchment paper, and brush them with egg mixture.
  11. Cook in oven for 15 to 20 minutes, until pastry is nicely browned.

  • To create original appetizers, cut small circles with a cookie cutter and place this filling on each one of them before folding. Prepare them ahead of time, freeze them, and cook them in the oven later.
